Flavor, Taste & Color

We work on bitterness, off-notes, sweetness and acid balance, and color stability — developing strategies to reduce, mask, or balance undesirable sensory attributes rather than promising to eliminate them entirely.

Typical challenge
A functional ingredient introduces bitterness or an off-note, or a natural color shifts or fades during processing, storage, or light exposure.
What we may investigate
Flavor and color interactions within the product matrix, potential taste-masking or flavor-balancing approaches, and factors contributing to color instability.
Example project types
Bitter-note reduction for a functional beverage; sweetness/acid rebalancing after a sweetener change; evaluating natural color alternatives; investigating color fade over shelf life.
Potential deliverables
Formulation recommendations, ingredient options for review, sensory observations, and a summary of trade-offs across approaches evaluated.

Taste masking, flavor modification, and sensory optimization are related but distinct approaches — which one applies depends on the project. Bitter-blocking tools, where relevant, are one option among several, not a universal fix.

Reformulation & Troubleshooting

When an ingredient swap, supplier change, or clean-label initiative changes how a product performs, we investigate what shifted and work through practical paths back to a stable formulation — particularly for beverages, powdered beverages, supplements, and functional foods.

A reformulation meant to remove or replace an ingredient introduces a new problem — sedimentation, clouding, poor dispersibility, or a texture change that wasn’t there before.
What we may investigate
Ingredient interactions in the product matrix, the likely mechanism behind the change, and formulation adjustments that address it without reopening other issues.
Example project types
Powdered beverage dispersibility issues; sedimentation or turbidity in a functional beverage; reformulating around a discontinued stabilizer; cost-driven ingredient substitution.
Potential deliverables
A root-cause assessment, formulation adjustment strategies, and recommendations for validating the revised formulation going forward.

We do not perform every type of shelf-life study, microbiological analysis, or analytical testing in-house; where that work is needed, we help scope it and can work alongside a lab or co-manufacturer you choose.

Product Development

We help translate a concept into a technically viable formulation — ingredient-system design, flavor direction, and prototype strategy — and support iterative development through to scale-up conversations.

FORMA does not manufacture products and cannot guarantee commercial or market outcomes — our role is getting a formulation to a technically sound, well-understood place.

Ingredient & Supplier Strategy

We help evaluate ingredient options, compare technical documentation, and identify potential suppliers worth approaching — so decisions are made with a clear technical picture, and requirements are easy to communicate.

Co-Founder

Julia holds a B.S. in Food Science from the University of Illinois Urbana-Champaign. Her background is in food formulation and product development, and she currently practices formulation science within a large food and beverage organization.

At FORMA, Julia focuses on formulation strategy, reformulation, and product-development work across food and beverage categories. She works directly with each client from the first conversation through final recommendations, so technical findings stay grounded in what's actually practical to implement.
